Potatoes and beans soup

Ingredients for 4 people

  • 200 grams of local greenish beans
  • 4 potatoes
  • 200 grams of local pigskin also called ‘nnoglia
  • Local extra-virgin olive oil
  • Salt
  • Chili pepper


Leave beans to soak the night before, than cook them into a clay pot for about two hours; after an hour and half add peeled potatoes, wash and cut them into small dices.

At last add pigskins leaving cooking everything together for about 15 minutes.

Finally add chili pepper powdered and oil and serve the soap piping hot, accompanied by some local bread slices lightly toasted.
