Ferricelli with horseradish, breadcrumbs and chopped walnuts
Ingredients for 4 people
500 grams of durum wheat flour
150 grams of stale bread crumbs
Garlic
Ground red pepper (or otherwise local horseradish grated)
Local sheep milk cheese
Chopped walnuts
Oil from local oil-mill
Salt
Alternatively, it’s possible add to the previous ingredients a tomato sauce seasoned with pieces of pork (pigskin also called “nnoglia”, pigskin sausage, cutlets).
Instructions
Prepare the dough with flour and water to get cylinders about 5 cm long and 1 cm in diameter; then pull them up using the “piece of iron”.
In a pan fry the garlic with the oil, together with the breadcrumbs.
Boil the pasta in abundant salt water, drain and pan-fry with the browned (and possibly with the tomato sauce seasoned with pieces of pork that has to be pre-cooked).
Serve the dish adding last of all a sprinkling of sheep cheese and chopped walnuts and, if you prefer, substitute the pepper with a pinch of grated horseradish.
