Omelette with asparagus and hops

  • A bunch of wild asparagus or wild hops
  • Some local pecorino cheese grated
  • Salt
  • Local extra-virgin olive oil


Fry wild asparagus or wild hops (the latter previously boiled in salted water) in oil and add some pinches of salt.

After some minutes add beaten eggs and pecorino cheese grated.
